You can change your title but your URL will be same with reapect to past title.
Lile if your past title is
I will fast install wordpress
So, with respect to this your gig URL is
I-will-fast-install-wordpress

Now, you change title to,
I will create professional wordpress website
So, your title will change but your URL will be same as older title this one,
I-will-fast-install-wordpress

You can change it anytime and will not effect any gig ranking. If you use the right keyword in your title, It will rank more and help getting more orders.
