Let’s say I have a gig that an go into multiple categories. Am I allowed to copy and paste the description and all the other information into a new gig under the other category? Or is this “illegal” here?

No, only one category. You cannot have duplicate gigs. You could make a different gig that does essentially the same thing though, as long as the title, images and description are different.
