How can you start the order of 40 days?

I have a question I am doing some bigger projects in 30 days and small in different durations. How can you send a 40 days custom offer or start a 40 days order?

first a custom offer of 30 days, then, other one of 10 days… but this depends of the job, so you need divide the job!
