How do people stand out in the crowd when they offer a generic gig such as mail merges or proofreading?

It’s tough with the service you’re offering (mail merging). There’s very little demand for it, as there’s only a handful of sellers offering the same service. I would think about offering other services that you could offer that can gain more traffic.
