I’m planning to make a new logo, a new gig, update an old gig and add some portfolio on Behance. I also have regular customers who will order again in the new year (January 2021). Which is better to set up an account at the out of office or just leave it offline?

Yes your account will disappear, But whenever u comeback on Fiverr didn’t got any 1 star review for not delivering the order…
